This webinar will present historical background on food fraud with presentations of specific incidents and lessons learned. The presenter will also discuss details of new U.S. FDA Food Safety Modernization Act and Global Food Safety Initiative requirements related to prevention of food fraud and economically motivated adulteration. The presenter will give an overview of various tools available to support the conduct of vulnerability assessments by the food industry, with a brief description of some of the similarities and differences within each. Finally, a discussion of what is currently known about how auditors are approaching an assessment of food fraud requirements will be presented.

Instructor Profile:Karen Everstine is the Senior Manager, Scientific Affairs with Decernis, a company that supports risk management and regulatory compliance for the food industry. Karen has fifteen years of food protection experience in both research-based and applied roles in academia, government, and non-profit organizations. She is the technical lead for the Food Fraud Database, a resource that collects and standardizes relevant food fraud data to support vulnerability assessments. She served as an expert volunteer on the panel that developed the USP Food Fraud Mitigation Guidance and subsequently led an effort to create a framework for hazard identification for food fraud-related adulterants. She completed her PhD and MPH degrees at the School of Public Health at the University of Minnesota where she received a Department of Homeland Security Career Development Grant. Her PhD dissertation focused on data analysis strategies to detect emerging food fraud issues. Karen began her public health career as a foodborne disease epidemiologist at the Minnesota Department of Health. She has authored many peer-reviewed journal articles, trade journal pieces, and one book chapter.
